Cape Cod Fish Cakes

1 pound firm white fish
2-3 large potatoes
1/2 medium onion grated
2 eggs
2 tablespoons melted butter
salt and pepper to taste

Steam fish until it easily flaked.
Boil Potatoes
Mash potatoes with onion, eggs, butter, and seasoning.
Flake and add fish. Mix well.

Shape into cakes and fry in 1/4” to 1/2” of oil until brown. Drain cooked cakes on paper towel before serving.

Makes 4 servings.
